What do you serve at a vegetarian BBQ?

vegetarian bbq
newwave74 asked the cooking recipe:

I am having a wedding reception at my mom’s ranch in June. We are vegetarians, so we probably won’t serve meat. I thought about roasting corn and having a topping bar. Any other ideas?

Well veggie burgers or veggie dogs stick with the traditional BBQ style. There is also the idea of a really good grilled portabello mushroom sandwich (and it looks like a burger so it has the burger feel).

Roasted corn is amazing and I love grilled eggplant.

A bean and corn salsa is a good warm weather food with tomatoes lots of kinds of beans corn and cilantro (and it has lots of protein which sometimes ishard to get as a vegetarian)

Hope these ideas helped

These are always hits:

BARBECUED TOFU

* 1 pound extra firm tofu, well pressed and sliced into 3/4 inch rectangles
* 3/4 cup barbeque sauce
* 3/4 cup brown sugar
* 1 tsp chili powder
* 1/2 tsp red pepper flakes
* 3/4 cup orange juice concentrate
* salt and pepper to taste

Whisk together the barbecue sauce, sugar, chili powder, pepper and orange juice over medium low heat about 3 minutes.

Place the barbecue sauce mixture in a wide flat dish, and place the tofu in the sauce, coating both sides well.
Allow to marinate for at least two hours.

Grill for 4 or 5 minutes on each side, brushing with additional sauce.

Sprinkle with salt and pepper just before serving.

GRILLED EGGPLANT

* 3 cloves garlic
* 2 tbsp chopped fresh cilantro
* 1 onion
* 2 tsp brown sugar
* 2 tbsp lime juice
* 1/2 cup chopped fresh basil
* 2 eggplants

In a food processor, process the garlic, cilantro, onion, sugar, lime juice and basil.

Slice the eggplant in thick, flat slices and place on grill, basting with the garlic, onions and herbs mixture, reserving half of the mixture.

Allow eggplants to grill for about 15 minutes, turning once.

Top with remaining onion and herb mix and serve hot.

TEQUILA PORTOBELLAS

* 1/2 cup tequila
* 1/4 cup margarine, softened
* 3 tbsp olive oil
* 1/4 cup lime juice
* 5 cloves garlic, minced
* 4 portobella mushrooms, stems removed

Whisk together the tequila, margarine, olive oil, lime juice and garlic. Allow to marinate for ten minutes.

Baste the mushrooms with the tequila mixture, then place on grill.

Allow to cook for 3 to 5 minutes, then turn and baste with more of the tequila mix and cook for another minute or two.

Top with additional tequila mixture before serving.

GRILLED PINEAPPLE WITH COCONUT
* 2 tbsp honey or agave nectar
* 2 tbsp dark rum
* 1 tsp lemon juice
* 4 or 5 slices fresh pineapple
* 1 cup flaked coconut

Whisk together the honey, rum and lemon juice in a wide dish. Add the pineapple and coat well. Allow the pineapple to marinate for at least one hour in the refrigerator.

Lightly grease your grill and fire up to a medium heat.

Coat the pineapple with coconut on both sides, pressing the coconut into the pineapple to get it to stick.

Grill on both sides for about 8 to 10 minutes.

ARE YOU SERIOUS!!
There is so much stuff you can do:
Go to Whole Foods, trader joes, or even a regular supermarket like Raplhs or whatever you have where you live, and go to the frozen food aisle.
There is lots of veggie solutions, all meat-free(mostly soy): Chicken patties and nuggets, Hamburger patties, Kebob on a stick, Corn dogs, even hot dogs, and sausage patties, and the company you want to look for is MORNING STAR. they have all that and more stuff too. AND IT tastes like real meat as well. Also, you might want to find BOCA BURGER. It tastes different, but it is good too.
You’re vegetarian and never ate this stuff before? It’s great.
AND at a bbq, you can roast vegetables, like tomatoes, carrots, potatoes, and with the addition of the fake meat, it will be SO GOOD, like a real BBQ. Go out there and look for these things.
Hope you have a fun time at your get-together. Don’t forget the salads

I have an awesome book of vegetarian BBQ at home. It’s the first cookbook I bought when I went veg and I love it.

Kababs are great on the BBQ - veggies or fruit, with or without marinated tofu. I love asperagus brusted with a little olive oil. Pizza in a BBQ is amazing - it’s more like a real pizza oven then your home oven is. You can wrap almost anything up in foil and cook it in the grill - veggies and seasonings with a little butter, or a cored apple with a little cinamon and brown sugar for dessert. Or potatoes.

I love the idea of grilled sandwiches using marinated Portabella mushrooms… I’ve tasted some excellent ones topped with a bit of goat cheese & caramelized onions. (search the web for recipes options).

The suggested eggplant sandwich is also a good option for a veggie barbecue.

If you want something slightly more elegant, how about vegetable kabobs skewered & grilled with peppers, onions, mushrooms, tomatoes, pineapples…. or whatever your favorite veggies are that cook well on a grill. I suppose you could even add marinated or seasoned tofu.

Serve the grilled kabobs over rice with slivered almonds or rice with a curry flavor or perhaps on a bed of seasoned spinach.

No offense but I never see the point of being vegetarian if one eats fake meat..so I would steer away from fake hot-dogs & hamburgers…the meat eaters won’t like them anyway.

Veggie kabobs
Soy dogs
Grilled eggplant
Grilled Portabella Mushrooms
Grilled veggie burgers

and a big pot of veggie chili.

BTW: you need a veggie screen for your bbq grill. Most vegetarian items fall through or stick to a standard meat grill.

You could roast a variety of vegetables! Besides corn, you could do bell peppers, potatoes, onions, zucchini, sugar peas, the list is endless! Sounds tasty.

EDIT: You’ve received some wonderful answers. The Eggplant recipe looks yummy!
